What's for Dinner Jackie

 

7-up cake
 
3 stks. butter
3 cups sugar
5 eggs
3 cups flour(SR)
2 t.lemon extract
3/4 cup 7-up
 
                                Cream together butter & sugar til light & fluffy.Add eggs one at a time.Add flour,lemon extract and fold in 7-up.Pour into a well greased & floured 12 cup bundt pan. Bake @325 degrees for 1 to 1 1/2 hrs.

SWEET POTATO SUPREME

 

2  cups cooked sweet potatoes (mashed)

2 T. cream

2 T.butter(melted)

1 t. salt

1/4 t. paprika

Mix all together and pour into casserole dish.

 1/2 cup brown sugar

1/2 cup butter

1 cup pecans (chopped)

 Heat over low heat, pour over potatoes. Bake @ 350 degrees 30 minutes or until bubbly hot.

 

Impossible Coconut Pie

4 eggs (beaten)
1& 1/2 sugar
1/2 c. S. R. flour
2 cups milk
1 t. vanilla
1/2 stick butter (melted)
7 oz. flaked coconut

Beat eggs, blend together w/sugar
& flour. Stir in milk w/remaining ingredients. Pour into 2
greased pie pans. Bake @ 350 degrees for 30 - 40 minutes
or until coconut is brown and pie is firm. Yield 8 slices

 

 Egg Custard

1 can of evap. milk
3 eggs
1 cup sugar
1 t. vanilla
1/2 t. nutmeg (opt)
3T. butter (melted)
3 T. flour

Put all ingredients together and
beat until smooth.
Bake @ 350 degrees for 30 - 40 minutes. It makes its own
crust. Yield 8 slices.

          

 

 

 Chocolate P-nut Butter Pie

2 cups 10 xxx sugar
2 1/2 cups milk
1 cup p-nut butter (smooth)
1 pkg. (3.4oz)chocolate pudding mix
1 8" pie crust
2 cups of cool whip

Mix sugar & 1 cup of p-nut butter
together and press into cooled pie shell. Mix milk, pudding
mix & the other 1/2 cup of p-nut butter together & pour into
pie shell, cover with cool whip, cool, then serve. Yield 8 slices

MOCK OYSTER STEW

 

1 or 2 eggplants

1 quart milk

1  stick butter

salt & pepper to

ur taste

 

                               Peel eggplant and cut into thumb size cubes. Pour milk in a  sauce pan; add butter and eggplant. Simmer (do not boil) ingredients for about 15-20 min. You can strain or leave eggplant in stew (I let it stay where its at) I promise it tastes just like oyster stew. My Mama made when I was a kid when she was hungry for oysters and they were outta season. You don't have the oysters, but the stew tastes amazingly just like you had oysters in it. But I don't eat the oysters anyway so I give them to my husband. Try it at least one time and I promise you'll do it again!

 

 

SHRIMP CREOLE

 

2 lb med shrimp

2 T.oil

1/2 cup chopped

onion, bell peppers.

1 cup celery chopped

1 lrg.can of tomato

sauce.

2 cups stewed tomatoes

1 1/2 cups cooked rice

1 T. garlic power

1/2 t. seafood

seasoning

salt & pepper to taste

 

                                Peel, clean and remove tails from shrimp, set aside. In a 4qt pan heat oil, then add the three veggies; Saute for about 10 min. Add the tomato sauce & tomatoes; simmer for five min. Add garlic power & seafood seasoning. Simmer for 15 min. add shrimp. Simmering only 5 min. more. Serve over the hot cooked rice. WOW THATS SO MOUTH WATERING, YOU'LL SEE!!  Enjoy

ROAST BEEF MY WAY (Jackie)
 
size of roast beef
of your choice
salt & pepper to taste
2 T. garlic powder
1-2 cups flour
5 T. oil
 
 
                                           Rub seasoning on R B very well. Coat R B with flour real good and don't shake off too much flour. (as this will make your gravy later) Brown on all sides with oil, when its good and brown pour 4-6 cups of water in pot. Put lid on and turn flame down to med -med low.  Let cook for about 2 hrs and keep checking to ensure it has enough water. By now you should see your gravy. It should be tender, but watch out it just may fall apart on you and you'll get burned.
Let stand for about 5 or so min to cut. All you need is mashed potatoes or rice ,salad and you meal is ready! Enjoy eating this as I have cooked it many times and it turns out right every time!

 

Chicken Pot Pie

1 chicken deboned.
1 can cream of
chicken soup.
2 cups chicken broth.
1 pkg. frozen peas
& carrots.
:crust:
1 cup S.R. flour.
1 cup of buttermilk.
1 stick of butter.
 
                             Place chicken pieces in bottom of baking dish, Heat soup with broth and pour over chicken. Add frozen veggies. Pour crust mixture over top and bake @ 350 degrees for 30-35 minutes or crust is brown Serves 6-8 people. This is good when ur gonna be coming home late.
All you need is a salad and ur dinner is ready!

 Crisp Marinated Cukes

1cup sugar
1/4 cup vinegar
1/2 salt
1/4 t. celery seeds
2 cups sliced cukes
1/4 cup sliced onions


In a bowl, combine the first four ingredients; mix well. Stir in the cukes & onions. Cover and refrigerate for several hours or overnight!


It's even better than store bought. I don't measure the cukes but just fill a wide mouth mayo jar full & it works just fine!!!
Yield 2 cups


p.s. Squash & Onions is real good too just use the same recipe!!

CHICKEN CROQUETTES

 2-3 chicken breasts

4 oz. cream cheese

(soften)

1 pkg. cornbread

dressing mix

salt & pepper to taste

  Boil chicken,debone and chop in a food processor. Mix all other ingredients together and shape into patties,flour then fry in oil. Put on paper towels to drain. 

ORANGE MARMALADE

5 oranges

2 lemons

2 cups water

1 cup sugar per

cup of fruit

                           Cut up oranges rinds including. Add water and let sit overnight. Add sugar, boil  1-1/2 hrs. or for thick marmalade 2 hrs. slowly. Pour into hot jars and seal.


Country Cornbread

2-1/2 cups all-purpose flour
2 cups yellow cornmeal
1/2 cup sugar
4 tsp. baking powder
1 tsp. salt
3 eggs
2-1/4 cups whole milk
1/2 cup butter, melted

Directions
1. Preheat oven to 350 degrees F. Grease a 13x9x2-inch disposable foil pan or coat with nonstick cooking spray; set aside.
2. In an extra-large mixing bowl stir together the flour, cornmeal, sugar, baking powder, and salt. In a medium bowl mix together eggs,
milk, and melted butter. Add to the dry ingredients and stir until just mixed. Do not overmix.
3. Pour into pan. Bake 35 to 40 minutes or until a wooden skewer inserted in center comes out clean. Using a sharp knife and sawing
motion, cut in 24 (approx. 2-inch) squares. Makes 24 servings.

 

  Homemade Bleu Cheese Dressing
 
3/4 cups blue cheese
(crumbled well)
1/2  cup mayonnaise
1/3 cup half & half
1 pkg. cream cheese
4 T. garlic powder
 
    Mix all together well. Makes 1-2/3 cups. Can be doubled or tripled.

Fig(strawberry)preserves
 
3 cups of Figs,unpeeled & mashed
3 cups sugar
2 boxes small straw-
berry jello
1 box of unflavored
jello
 
                       Wash figs and mash in food processer til smooth. Add sugar and jello, cook 10 minutes over low heat. Pack in hot jars and seal. You could never tell the differance about the figs subbing for strawberries!

Homemade 1,000 Island Dressing

 

1 cup mayonnase

1 T. parsley

2 T. sweet pickle relish

2 T. chili sauce

1 t. finely chopped onion

1/2 paprika

1 finely chopped boiled egg

 Mix all ingredients together well. Makes 1-1/4 cups. Can be doubled or tripled.

 

Dump Cake

 2-16 oz pie filling

Any kind of fruit (even

2 different kinds)

1 box of white cake mix

2 sticks butter

1/2 to 1 cup nuts

(chopped)

                                       Pour pie filling into bottom of a 13x9 in. pan. Sift (very important) dry cake mix all over pie filling.

Cut butter into patty size and cover the cake mix , s  sprinkle the nuts all over the top. Bake @  350 degrees for 45 minutes or until brown.

p.s.

You can use 2 different kinds of fruit but put a thick layer of tin foil between the layer of the fruit so that the filling won't slide through. Blueberry is my personal favorite but cherry is the other part of the family's fave so that's why I started doing it this way. It'll make ur tongue slap ur face silly!!

 

THE WAY I

    

  COOK MY RICE
 
2 cups rice
3-4 qts. water
salt to taste
 
                         This way you can have perfect rice every time ,w/o having overcooked or sticky but flakey rice. Boil rice in a large pot and check in about 7 min for doneness ,if not done cook for about 3 more min. When cooked, drain in a sm. holed colander and rinse with a pot of hot fresh water to get all the starch out.(which is what makes it sticky) Let drain for about 5 min and pour into a bowl for serving.

SWEDISH MEATBALLS

2 doz. frozen meatballs

3  lrg T. sour cream

2-3 cups brown gravy

salt & pepper to taste

1 16 oz. bag wide egg

noodles

 

                                 I make my own gravy or you can use the instant brown kind. I guess 3-4 pkgs. will be plenty.Make gravy and put meatballs in and let simmer for about an hour. In the mean time cook noodles;drain.Put the sour cream in a spoonfull at a time to make sure its not too strong for your taste. Simmer for about 10 minutes more. Serve meatballs over the noodles. Enjoy,I just made this just last week and it was sooooo good.

EASY MEATBALL SUBS
 
 
5 meatballs per sub.
1 can or jar spaghetti
sauce of ur choice.
subs for everyone.
mozzarella cheese.
 
 
                             Put spaghetti sauce in pan with the
meatballs; simmer for about 20 minutes. Make sure the sauce is kind of thick. Heat buns.Put 5 meatballs per sub
then put one good handful of cheese on top. Enjoy

1 t. salt
1/2 dry mustard
1/4 cup vinegar
1/4 c lemon juice
1/2 t. paprika
 
        Mix all together well. Can be doubled or tripled.
