PORK ROAST MY WAY

3-4 lb. roast

3 chicken bouillon 

more if needed

1/2 cup minced onion

1/2 t. poultry seasoning

potatoes & carrots(opt)

1 1/2 cups cooked rice(opt)

salt & pepper to taste

 

                                          Wash roast and put in a lrg. pot with enough water to cover the roast and let boil for about 1 hr. Check then if water is ok then let simmer for about another hr. Take out roast and cut into big chunks then put back in the pot. Peel skin off carrots place into pot,let simmer til carrots are half done. Peel potatoes and cut into 1/4 chunks,put those into pot also;let simmer about 30 min. And there you have a meal fit for a king(or queen) I serve mine over rice.(yes I know that's two starches but you gotta give in sometime and this is one of those times! I cooked mine for dinner today and man I am so full.

TUNA & CELERY CASSEROLE

 

1 large can tuna

3 cans cream

of celery soup

2 cups cooked

rice, egg noodles

or saltines

2 1/2 cans water

3 T. butter

salt & pepper

to taste

                    Combine tuna, celery soup, butter & water. Cook over low heat till hot NOT boiling. Serve over rice, noodles or saltines.

VANILLA WAFER CAKE

12 oz v. wafers

crushed

2 sticks butter

6 eggs

1/2 cup milk

2 cups sugar

7 oz coconut

1 cup nuts

(chopped)

           Cream butter & sugar together well. Add one egg at a time. Add the vanilla wafers alternating with milk. Fold in coconut & nuts. Bake @ 300°for 1-1/2 hrs. I use a tube pan.

COCONUT CREAM PIE

1 sm. pkg. vanilla

instant pudding mix

1 9" baked pie shell

1 cup coconut

2 egg whites

3 T. powered sugar

           Make pudding as directed on pkg BUT omit 1/2 cup milk. Put 1/3 cup of coconut into pudding; mix well. Pour mixture into baked pie shell, spread meringue on top, sprinkle w/coconut then put in bottom of oven till brown.

MERINGUE

Beat egg whites til stiff peaks form ,then put the powered sugar in and beat again.

Any Fruit Cobbler

 

1 stick butter

1 cup flour

1 cup sugar

1 cup milk

1 can fruit

pie filling

 

In casserole dish melt butter, mix the flour, sugar & milk together. Pour batter over butter carefully & then add the fruit in the center long ways of the pan. Bake @ 350° for 30 minutes. Serve hot. (with vanilla ice cream over the top if you dare)

 

 

CHICKEN  TETRAZINI
 
1 -whole chicken
or  3-4 breast
1/2 can chicken
broth
1/2 cup grated
cheese
1-can cream of
mushroom soup
1 T. Worcestershire
shire sauce
 1 -16 oz box of
spaghetti pasta
1/2 stick of butter
1 1/2 cup of bread
crumbs
mushrooms (opt)
 
                  Cook chicken until done, debone chicken,
save liquid, cut in large pieces. Sprinkle garlic power in a 9x13 casserole dish. Cook spaghetti in chicken broth, do not drain liquid. Put chicken on bottom of pan, add cooked spaghetti. Mix soup, Worcestershire, mushrooms & butter together then pour over top. Sprinkle cheese & bread crumbs over top and bake @ 350 ° until cheese melts & crumbs brown.

CRAB CAKES ALA JACKIE

 

1 lb crab meat

1/2 cup red bell pepper

1/2 cup onion

both chopped finely

2 eggs beaten

27 Ritz crackers

finely crushed &

divided in 1/2

1/4 cup oil

 

                               Mix crab meat, peppers, onions, eggs & 1/2 of the crackers crumbs. Set in refrigerator for about 1 hr to chill until ready to use. Shape crab mixture into approx. 10 patties then coat with the remaining cracker crumbs. In the meantime heat oil in frying pan on med heat. Add crab cakes 2 or 3 at a time as not to crowd. Cook approx. 5 minutes (maybe less) on each side or until pretty and brown. Have paper towels ready when you remove the patties so the oil drains off. If you like a dressing or mustard to dip in, use your favorite. Makes approx. 5 servings 

p.s. You could use this same recipe for making salmon patties too!

HOMEMADE APPLE FRITTERS
 

 1 can of apple pie

filling or any fruit

3 cups of SR flour

1 1/2 cups sugar

1 1/2 cups milk

1 T. cinnamon

1/2 t. nutmeg(opt)

1/2 t. baking soda

1 t. vanilla

 1/2 raisins(opt)

2 or 3 quarts oil

                           Mix all ingredients well (except oil) together and drop by T.(heaping) into hot oil. Fry til brown; drain and then sprinkle with powered sugar or mix cinnamon & sugar together and sprinkle with that combo. Ummmmm thats real good & tasty! Enjoy, I do.
